MIX FOR BREAD BAKING
Ideal for homemade country style naturally leavened bread

For professional use only, rich in fibre and wheat germ.
METHOD: Mix all ingredients together in the spiral dough mixer for ten minutes on the first speed setting then for a further ten minutes on the second speed setting, until the dough is thoroughly mixed and takes on a uniform smoothness. Leave the dough to rise for ninety minutes at room temperature, about 25C. Divide into 1 kg pieces and shape into long oval loaves. Leave to rise for a further sixty minutes at 30C. Bake as per usual, if possible with oven valves open. Required baking time approximately 60 minutes.
