PRONTO SEGALE
Mix for the preparation of rye bread.

Basic recipe:
Pronto Segale 10 kg; water 5,5 l; fresh yeast 400 g; salt 180 g.
Mix all ingredients using a spiral mixer for 5 minutes on 1° speed and for 7-8 minutes on 2° speed until you get a smooth dough, do not leave the dough rest, form thin loaves, and lay them on corrugated baking trays, let the dough rise for 40/50 min., place into pre-heated oven at a temperature of approximately 220°C. Bake with steam. Master Tip: If dried yeast is used instead of fresh yeast, please use 1/3 of the above indicated quantity.
